小麦是世界上重要的粮食作物之一,因其具有独特的面筋,可以被加工成多种面食品,如馒头、面条、面包和蛋糕等。小麦籽粒蛋白质含量直接影响小麦的营养品质和面食品加工品质。2006年,影响小麦叶片衰老和籽粒蛋白质含量的关键基因NAM-B1被克隆,但相关的作用机制至今尚未报道。
