将高电压脉冲电场(PEF)技术用于牛骨胶原蛋白的提取,通过单因素试验和Box-Behnken中心设计法得出提取牛骨胶原蛋白的最佳工艺参数为:底物质量浓度1.0g/(100mL)、胃蛋白酶添加量3%、pH值2.5、场强21.98kV/cm、脉冲数7,在此条件下,可溶性蛋白质量浓度高达16.21mg/mL,通过紫外光谱鉴定了所提取的样品为纯胶原蛋白而不含其他杂蛋白。
